Canning Pickled Beets!

Friday afternoon Jay said, “what have we got going for tomorrow?”

My reply, “Nothing, absolutely nothing, nada, null, and ain’t that nice”

But that was before the phone rang and McDaniel’s Farm Market called to say the beets Jay had ordered were in.
So it was down to just outside of Millington to pick them up before 7 pm closing.  I wanted to have everything ready to start canning on Saturday morning.
We had been down to our last jar of pickled beets and we wanted to get more started before we were out entirely.

By Saturday afternoon there were 17 pints sitting on the counter and the mess was all cleaned up.

So my friend instead of sitting in the swing crocheting and playing peek-a-boo with this cute, little Hummingbird we spent the day visiting with Les, Anne, and Courtney ( due to a power failure where they live) and canning pickled beets!

    Pickled beets are so yummy.
    I buy a certain brand, sliced, in a jar.

    One time when Husband and Middle Son (then age 12) were getting items on the shopping list, Son saw beets and immediately put 2 jars of my favorite kind into the cart.
    Husband said No, too expensive, and exchanged the jars for the house brand IN A CAN!
    Apparently, there was a bit of resistance from Son, who knows Mom’s preference.

    There came a compromise, one jar, one can.

    At home, when I was unbagging and getting ready for supper, I asked Son about the can of beets.
    He responded “Talk to your husband”.

    We always get pickled beets in a jar now.

    (this is NOT a hint that I want your beets, it is just a memory jumped into my brain)
